Baked Oatmeal

3 c. organic Gluten Free* Rolled Oats (Bobs Red Mill has a good option)

2 tsp. ground Cinnamon

2 tsp.  baking Soda (Bobs Red Mill has a good option)

1/2 tsp. sea salt

2 tsp. fresh lemon juice

1/2 c. pure maple syrup

1 1/2 c. homemade milk alternative of choice (water may also be used)

3 eggs

1/4 c. ghee or coconut oil (melted)

2 tsp homemade vanilla extract (optional)

3/4 c. dried fruit or chopped nuts (optional)


Preheat oven to 350.  In a small bowl, add oats and just enough water to fully submerge oats. Soak oats in water over night.   Whisk together drained oats, lemon juice, maple syrup, milk alternative, eggs, melted ghee or coconut oil and vanilla extract in a medium sized bowl.  Add the dry ingredients to the wet. Once well combined, stir wet ingredients into oatmeal mixture. Fold in dried fruit or nuts.  Spread mixture into a 9 x 13 inch baking dish.  Bake in preheated oven until firm.  Slice and serve with a slack of homemade milk and fresh fruit.  Yield: 8-10 servings

Option: may soak oats and dried fruit overnight.
