Shortly after we moved, I discovered the Pink Yogi Smoothie, at a local juice bar. It was so good that I immediately went home and tried to recreate this treat. A very sweet and creamy smoothie that tastes a lot like a milkshake- with less guilt and gastrointestinal distress. While I haven’t made one of these for my son, it is very satisfying and I will occasionally use it as a meal replacement for those days I’m on the run.
Yields 1 serving
2 c. Leafy greens of choice (mild tasting)
1 Banana (frozen)
1 c. Dragon fruit (frozen)
2 Dates (pitted)
1 c. Almond milk (clean)
2 tsp. Coconut (shredded)
1 tsp. Almond butter
Place greens into the bottom of the blender first, add remaining ingredients and blend in a high-powered blender on high until smooth.
This smoothie is high oxalate and may be problematic for some, see this post on oxalates. It is also very high in sugar, which you may want to keep in mind if dealing with any fungal overgrowths.
