I was vacationing in the mountains with a fellow l I was vacationing in the mountains with a fellow low-glutamate mom, and as moms do, we all packed some treats for us to share. Well, my friend brought the most amazing cookies I have ever had, even during my gluten-filled days.  After gaining about 5 lbs over the week, I begged her to share the recipe. The recipe was from the talented Laura Lea Balanced. With a few minor tweaks to make this recipe more compliant and lower in glutamate, it has become our go-to recipe that I’m not too embarrassed to share with those on the Standard American Diet. You’re welcome, lol.

Ingredients

Dry ingredients

1 1/2 cup  Blanched Almond Flour

1/2 cup  Gluten-Free Rolled Oats

1 1/2 tsp.  Baking Soda

1/2 tsp.  Himalayan or Sea Salt

Wet Ingredients

¾ cup  Coconut Sugar

1 large  Egg (room temperature)

10 tbsp  Coconut Oil (melted)

1 1/2 tsp.  Vanilla Extract

1 tsp  Lemon Juice

Mix-In’s

3/4 cup  Chocolate Chips (we use Enjoy Life or Hu Chocolate to keep lower in glutamate)

1/2 cup  Shredded Coconut

1/2 cup  Pecans (chopped into ¼” pieces)

1/2 cup (packed) Medjool Dates (pitted and chopped into ¼” pieces)

Tidbits

Chocolate is pretty much high in everything (histamine, phenols, oxalate, somewhat glutamate, etc.), so watch for reactions and or cut back on the amount used if you are super sensitive. Sub 5 tablespoons unsweetened applesauce for half of the coconut oil if necessary.  We double this recipe nearly every time I make it because it is just THAT good.

While low levels of vitamin D can induce an imbala While low levels of vitamin D can induce an imbalance towards excess glutamate (excitatory neurotransmitter) and low GABA (calming neurotransmitter), vitamin D can reduce excitotoxicity (excess glutamate and excitatory neurotransmitters) through modulation of the NMDA glutamate receptor.

However, in my opinion, vitamin D’s most important benefit is its ability to calm microglial activation. Microglial activation occurs as the microglial cells (the first and primary form of the immune response) signal the body to produce inflammation (inflammatory cytokines) and glutamate (which isn’t talked about as frequently). I believe for many with underlying infections (PANS/PANDAS, Lyme), Autism, disease, mold exposures, and immune dysfunction from repeated immune activation that, this is a primary cause for excess glutamate and symptoms. When there is an ongoing immune event, microglial cells can chronically flood the body with inflammation and glutamate.

Easy Energy Balls I'm busy prepping for a house Easy Energy Balls 

I'm busy prepping for a house full of guests headed our way! When we first transitioned to lower glutamate foods,  these energy balls became a staple in our home.  They were easy to travel/hike with, served as a great accompaniment to a smoothie for breakfast, worked in lunch boxes, and made a nice treat after dinner. With time the recipe morphed because these easy energy balls acted as a great vessel to hide dried herbs in. Please don’t be afraid to adapt this recipe, add new ingredients, and increase the nutritional density of these little treats.

Ingredients

2 cup.  Gluten-Free Oatmeal

1 cup.  Unsweetened Nut or Seed Butter (raw is preferred)

2/3 cup.  Raw Honey (we often do 1/2 cup of honey or less, but know those just starting out may need for these to be a bit  sweeter)

2 cup.  Unsweetened Shredded Coconut (watch for additives)

1/2 cup.  Ground Flaxseed

1 cup.  Clean Chocolate Chips (Raisins or Goji Berries also work great)

1.5 tbsp.  Ground Milk Thistle (this is completely optional as so may not tolerate it. You may also sneak in some other mild herbs like nettle or passionflower)

3 tsp.  Vanilla Extract (clean or homemade)

1 pinch  Himalayan or Sea Salt
