As gross as it may sound, I love a carrot smoothie.  The sweet earthy flavor of the carrot and the ginger’s spice adds depth to the tropical fruits’ sweetness. I understand that many families cannot tolerate so many sugary fruits, so we have also added frozen cauliflower, frozen butternut squash, and/or yellow squash with little flavor change.  This, of course, depends on the ratios used.  We have also omitted the orange juice and just used fresh oranges instead.  Feel free to play with this recipe.

Ingredients

1 c.            Pineapple (frozen)

1 c.             Mango (frozen)

1                 Banana (frozen)

2                 Large Carrots (or 3 small)

1/2-3/4″.  Ginger Root

1 tsp.         Rosehips (optional)

1 c.             Fresh Orange Juice

1 c.             Water

Instructions

Place all ingredients in a high-powered blender and blend until smooth.  A tamper (also call the plunger in our house) will likely need to be used unless you add more water.

Tidbits

Ginger can be immune-stimulating. You may need to watch for reactions, especially if struggling with PANS or PANDAS.  Around Halloween, we like to make this and serve in a mason jar with a jack-o-lantern face drawn on the outside.
