Smoothie Bowls are our go-to option for last-minute weeknight meals and tonight was the perfect example of this situation. While dealing with high temperatures on the official first day of Autumn, I attempted to create a cold autumn-inspired Pumpkin Smoothie Bowl for dinner. It was a hit! Heads up, this smoothie bowl is super sweet and is more like a dessert, hence the Pumpkin Pie name. This recipe made three large servings. Happy Fall!!!
Ingredients
2 cups Butternut Squash (frozen cubes)
2 Bananas (frozen)
1 1/2 cup Plant-Based Milk
2 Raw Dates (pits removed)
2 tbsp. Pumpkin Puree
1 tsp. Pumpkin Pie Spice
2 tsp. Vanilla
Top with clean granola (or something like this), pumpkin seeds, hemp seeds, pumpkin pie spice, almond butter, etc.
Instructions
Place all ingredients in a high-powered blender and blend until smooth. A blender with a lot of strength like a Vitamix and a tamper (aka a plunger in our house) will be necessary to get the smoothie smooth enough.

To make sure this recipe low glutamate, make sure you source clean ingredients including milk, boxed pumpkin puree, pumpkin pie spice, homemade vanilla is best and clean toppings. If you don’t make your homemade milk, we like to use Unflavored Malk, Elmhurst, or this Coconut Milk option.
