I recently attended a birthday dinner for one of my good friends, and her husband served this AMAZING Wasabi Caesar Dressing. I admit I was unsure of what to think about it initially, but I was blown away with how good it was, and I have been dreaming about it ever since. It was literally one of the best salad dressings I’ve ever had! Since dairy and I don’t mix well, I was on a mission to create my own, and after a few failed attempts, I landed on this adaptation of the Minimalist Baker (I love her stuff) 5-minute Vegan Caesar Dressing. You will want to adjust the horseradish/wasabi based on your heat tolerance and understand it may need to be adjusted even more so for children. If you’re looking for the classic Caesar dressing, omit the horseradish/wasabi.
Ingredients
1/4 c. Hummus (plain/clean store-bought may also work)
1 tsp. Spicy mustard
2-3 tbsp. Lemon juice
2 tsp. Capers cured in salt
4 Garlic cloves (minced)
1 pinch Himalayan or sea salt
1 pinch Black pepper
3 tbsp. Olive oil
3-5 tsp. Horseradish (minced) (wasabi may be used if you find a clean option but you will want to use slightly less)
Instructions
In a small bowl, combine all ingredients and stir until well combined and creamy.
