Here is a simple nutrient-packed lunchbox option that we loved to serve on top of a bed of greens or lettuce wraps. Dill and red onions are excellent sources of the flavonoid, quercetin. Quercetin is neuroprotective against glutamate-induced oxidative stress, free radicals and helps to inhibit glutamate release (which decreases neuron firing). Dill is also a natural antimicrobial and helps to property utilize fatty acids. Delicious and beneficial!

Ingredients

3 c.          Shredded Chicken
1/2 c.      Homemade Mayo
1/4 c.      Dill (packed)
1/2 c.      Green Grapes (quartered)
3 tbsp.    Red Onion (diced)
1/2 tsp.   Sea salt
1/4 tsp.   Ground pepper

Instructions

Shred or chop cook chicken by hand. Add all ingredients into a medium bowl and stir until well combined.  Serve immediately or place covered in the refrigerator for future use.

Tidbits

Don’t be afraid to toss in a few extra herbs into this one!  Milk thistle, nettle, horsetail, microgreens, celery, jicama, etc. can all easily be added for a little additional nutritional value!
