Easter Lemon Curd Fruit Tart 🐇 I love a good c Easter Lemon Curd Fruit Tart 🐇

I love a good custard/curd, but I hadn't attempted to try since our drastic diet changes (we were egg-free for a few years). This simple recipe can easily be topped with fresh fruit or served with coconut whipped cream to make it a quick show-stopper.

The incredible Adrienne Samuels of Truth In Labeling (https://www.truthinlabeling.org/index.html ) has started a petition to get the FDA to remove the generally recognized as safe (GRAS) status of MSG and L-glutamic acid used in human food. 

We can do this! There is power in numbers, and we NEED you to comment on this petition. Now is our chance to tell them our experience and hopefully make a difference in our food labeling.

“In January 2021, a Citizen Petition was filed with the FDA requesting that it acknowledge the ongoing danger to human health posed by monosodium glutamate (MSG).
Evidence shows that the glutamate industry has had close ties to the FDA for over 50 years, not only allowing their lies to go unchallenged, but actually reviewing and approving the shoddy research they put forth to allegedly “prove” the safety of their products.

Clearly, it will take nothing less than a gigantic grass roots effort to pressure the FDA and the U.S. Legislature that supports them to strip these additives of their generally recognized as safe (GRAS) status.

Diversity in diet (especially in plants) promotes diversity in your microbes. An imbalance in your microbes promotes inflammation, glutamate, and immune dysfunction, which trigger behaviors and symptoms. 

One of our worst moves in healing was to get super restrictive with whole foods. Between the removal of gluten, dairy, soy, corn, and free glutamate due to his neurological reactions/convulsions and the removal of 30+ IgG food sensitivities, we got down to lamb (least allergenic meat), green apple (low sugar and phenol), Dino kale (low oxalate), and a small amount of sweet potato. We were in a hole, and he seemed to react to everything—headbanging from bananas, epic tantrums and biting from berries, sandy stools from oxalates, and so on. 

In addition to this, we were trying to find balance in food groups. Too many carbohydrates caused a surge in yeast and fed SIBO (among other things), which resulted in his convulsions/shakes (CMS) and stimming.  Too much protein increased his histamine and glutamate levels and exasperated his phenol/salicylate sensitivity. All of this was emotionally and physically exhausting and only left us more sensitive and reactive to the food he was eating.

We saw some of our most significant healing when we stopped our super restrictive diet and worked to consume a wide variety of whole foods with a heavy emphasis on veggie consumption. Due to underlying mitochondrial issues, lack of enzymes, bile production, etc., we had to start with cooked foods, bitter foods/herbs, and SLOWLY work our way to more raw food. More growth and progress came with each step.

We learned to manipulate microbial populations with every single bite we took.
