Peruvian Inspired Chicken Soup

One of our favorite Peruvian restaurants in Charlotte makes this amazing chicken and rice soup. Unfortunately, pretty sure it’s loaded with MSG because I get a massive headache after eating it.  This was our spin on a healthier version that I often make with leftovers.  It makes for a quick and easy meal on busy school nights.. Serves 4 Nut-free, Casein-free, Gluten-free, Grain-free, Egg-free, Soy-free Ingredients 6 c. Homemade chicken broth (cooked under 3 hrs and no vinegar) 2 c. Shredded chicken (used WF naked organic rotisserie chicken) 2 c. White or Brown Rice (cooked) (optional) [...]

Pineapple Cherry Green Smoothie

Another smoothie combination, thrown together for an easy breakfast or lunch! Ratios can be adjusted based on the amount of fruit tolerated and/or fresh stevia leaf (we bought our plant from Lowes) may be incorporated if you’re really scaling back on fruit.    This quick option helps us to meet our goal of getting at least one green vegetable in at every meal! Serves 2 Ingredients 4 c. Organic Kale (packed) 1-1 oz. shot Organic Wheatgrass (we buy these in the frozen section of Whole Foods) 1 1/4 c. Frozen Organic Cherries (we buy these from Costco) [...]

Cashew Bread

Recipe adapted from the amazing Danielle Walker at, Against All Grain.  I highly encourage her cookbooks; Delectable Paleo Recipes, Meals Made Simple & Celebrations.  While all ingredients are not low glutamate, most can easily be adapted.  While we don’t consume a lot of bread now, this recipe was essential in helping us transition away from processed foods.  I would be cautious not to go overboard with the consumption of this bread.  The amount of egg and nuts found in this can be problematic for some (especially if sensitive to oxalate) and may result in behavioral symptoms, including constipation.    Ingredients 8 [...]

Vegan Parmesan Cheese

There are just certain dishes where you need to incorporate the parmesan cheese flavor!  We keep a batch of this in our freeze to step up some of our easy weeknight meals.  We love this sprinkled over our yuca crust pizza, grain free spaghetti & meatballs, roasted artichoke hearts and anything that sounds good at the time. If you can tolerate nuts, you will want to try this! Ingredients 1 c. Organic Raw Macadamia Nuts 1/4 tsp. Himalayan Salt 1/4 tsp. Garlic granules* 1/4 tsp. Onion granules* Instructions Place all ingredients in a food processor and pulse until fine [...]

Mayonnaise

Homemade vinegar-free mayonnaise has become a staple in our home.  We primarily use it in salad dressing blends or as a base for chicken, egg, tuna and shrimp salads.  If you can tolerate eggs, you may find this proves to be a great addition to your meals. My son loves it! […]

A Story of Hope | “My Child is now 100% Neurotypical”

We occasionally get letters or comments from parents that have seen improvements in health with diet. To help provide hope to so many still in the trenches, I’ve decided to make more of an effort to share some these comments (with their permission, of course). Many of us don’t have it all figured out, but we cling to the hope and words of progress. Everyone’s journey is different, diet changes may not reap huge changes for all, but it is absolutely helping some. Like this family, glutamate and diet have been a huge piece to our puzzle. [...]

Managing a Dietary Infraction

Help, my child has accidentally consumed a food source of glutamate. How can I help them calm down?!? We've all been there before, and I am convinced I have some PTSD from adverse reactions like this.  Immediately* following a dietary infraction, we give a capsule of activated charcoal (opened and poured into a glass of water...it will turn the water black).  We also try to increase fibrous vegetables and water consumption to help detox on a cellular level.  If you find yourself in a bit of crisis mode, look at this post for additional ways to lower [...]
